In the past week, I've made two batches of pie pastry, in order to make three pies. Two pumpkin pies (one-crust) and an apple pie (two-crust). As an experiment, I made one batch in the food processor, like Julia Child is always extolling, and one batch by hand. You would not believe the difference. The food processor absolutely sucks for making pie pastry. Maybe Julia Child had a bigger processor, or just better luck, but I was not at all pleased with the results when I tried it. Going back and doing it by hand was astonishingly easier. Making the pastry, chilling it, rolling it out, everything was easier with the handmade batch.
