On the way home, lcohen and I discussed the parameters of a hypothetical Cherry Natick. It had to be filled with cherry preserve, of course. It also really should be gluten-free, since some of the singers would really appreciate that. I also thought it would be nice for it to be dairy- and soy-free, so I could feed any hypothetical leftovers* to a friend of mine with those additional allergies, who always appreciates cookies designed for her.
And so I let my mad scientist side out to play! I found a recipe for hamantaschen that uses an almond-flour pastry dough, so I'm making a slight variation on that recipe. I wanted to try making it with goat butter (for the friend who can't eat cow dairy), but I couldn't find any, so I got this lactose- and soy-free vegan butterish spread that looks like it ought to do most of what dairy butter does. The dough was softer than I'd anticipated -- using the spread instead of goat or cow butter might have something to do with that -- so I decided to shape the Naticks as little pastry cups filled with cherry preserves that may or may not end up having powdered sugar sprinkled on them. They're in the oven now, and I guess I'll know in five minutes how the Great Cherry Natick Experiment will turn out . . .
*Actually, given the way singings can work, this may mean something more on the order of "holding a few back."
